It was 93 degrees.
I had just fished three wet swimsuits out of the back seat, along with a pile of sand that looked like it could start its own beach.
The car was a humid mix of sunscreen, sweat, and a mystery goo I was too tired to identify.
Someone’s Blizzard from Dairy Queen had been left behind to melt into the cup holder—soft-serve soup by the time I found it.
And I was still wearing the cover-up I threw on at 8 a.m.
Classic summer.
So I did what any reasonable woman would do:
I opened the fridge, pulled out a LaCroix, squeezed some lime, added a splash of coconut milk—and called it a day.
No drama. No epiphany.
Just a refreshing moment that made me feel like I had somewhat of a handle on life.
Lime in the Coconut (and Called It a Day)
Simple. Creamy. Sparkly. Slightly tropical.
Pairs well with sandy feet, a half-finished summer to-do list, and pretending your backyard is the beach.
🥥 Summer Mocktail Recipe: Lime in the Coconut
Ingredients
3 Tbsp coconut milk or creamer
1 can Coconut LaCroix (or any sparkling water)
1–2 wedges of fresh lime
Ice cubes (love me some nugget ice chips)
Instructions
Fill a tall glass with ice.
Add 3 tablespoons of coconut milk.
Top with Coconut LaCroix.
Squeeze in fresh lime juice.
Stir it and sip it… and pretend you’re on a beach.
Even if you’re currently staring at your driveway.
Notes
No Coconut LaCroix? No Sweat. Plain bubbly water works fine.
Want it sweeter? Add a drizzle of agave or vanilla syrup.
